raisins yogurt bread

today i made a bread using chobani plain non fat yogurt, i specially buy that for this~!:)Image

when i search for recipes, i thought that it would taste like banana bread which is super moist, but i can’t notice that the one i finally used was actually a recipe for a quick bread, which so then is really a texture of bread, bit dry:(Image

but i love the crisp top and bottom so much, as i’ve really baked it for 50minutes which’s usually for a real bread timing.

half Cup Greek Non Fat Plain Yogurt

two egg whites

twenty one drops of vanilla stevia

one cup of gluten free pancake and waffle mix

1/2 tsp. salt

1/2 cup of raisins

one whole apple diced

1/2 Tbsp. cinnamon

1/2 tsp lemon juice

for the topping, i sprinkled oat bran and then mix cinnamon with water and stevia and pour on top.Image

the liquid topping end up caramelized the sides and bottom, which made the crispy topping so super fabulous and i’ll surely repeat this next time,

but i need to add some more moisture there, maybe mashing a banana or add more water…as i actually want a cake like thing.

guess what? this’s just 70kcal for each piece of bread, which i cut the bread into nine pieces, the lemon juice and sour yogurt added a smell of yeast into the bread which is actually yeast free!!!Image
