granola-style PB& choc banana bread<3

today i bought a pack of 63% chocolate chips from citysuper today, and took another pack of new reese’s peanut butter chips, for my new experiment.


“Better than plain old banana bread, this one is decadent and delicious with huge chunks of melty chocolate and crunchy pieces of pecans. You could serve this warm for dessert with a scoop of vanilla ice cream, or just slice and tuck into school lunch boxes for a treat.”—chasingtomatoes:P i read this and decide to make this with some small changes, actually, HUGE changes.Image

the original ingredients used are here: 2 eggs, 1 cup mashed banana, 1/3 cup vegetable oil, 1/4 cup milk, 2 cups flour, 1 cup sugar, 2 tsp. baking powder, 1/4 tsp salt, 8 oz of semi sweet chocolate chunks, chopped, 1/2 cup walnuts or pecans and coarse sugar for topping.Image

however i don’t want any egg yolk so i used three egg whites plus LOTS of baking powder, then i mashed two large bananas and add in more chocolate chips than any other chocoholics would do, i add both namaste’s sugar free muffin mix and hodgson mill’s pancake mix for the flour part,Image

i also mixed in lots of cinnamon for taste, and i topped the banana bread with reese’s peanut butter chips, sweetened cranberries, bob red mill’s extra thick rolled oats instead of “bad-for-you”sugar,Image

and the reason i bought reese’s chips is as butterscotch or white chocolate are both low in protein while having the same calories with reese’s chips.Image
